Dessert is a wonderful thing.  Do you ever find yourself checking out the dessert menu before looking at the entrees?  I do.  In fact, I had a craving for something sweet while working on this post.  You have been warned!  Proceed if you dare!  Below, you will find lots of desserts to tempt your willpower.

Petits Fours are the perfect marriage of cake and candy. Fondant icing covers bite-size cubes of yellow, sponge or pound cake. While the fondant is still wet, decorations can be applied using piped icing, or a sprinkling of either candy or nuts. As an added burst of flavor, jelly or butter cream can be spread over the cake prior to applying the fondant.

Pumpkin Pie with Homemade Crust

Pumpkin pie has a delicious flaky crust.  There are some great baking tools, such as fluted piecrust cutters for edging, and spring-loaded piecrust cutters to create cutouts like the leaf shown in the photo above. 

Spiced Pumpkin Roll with Orange Cream Cheese Icing

A spiral design is the hallmark of this impressive dessert.  Bake the cake in a jellyroll pan lined with parchment paper.  After baking, lay the cake face down on a towel.  If necessary, trim any ragged edges.  Starting with a long side, roll the cake in the towel and cool completely on a wire rack.  Unroll and remove the towel and lay cake flat.  Spread the filling over the top within 1/2” of the edges.  Suggested fillings include whipped cream, pie filling, and pudding.  Carefully roll the cake and place it with the seam side down on a platter.  Garnish as desired.

Rice pudding, fresh from the oven, is one of life’s great comfort foods. 

Strawberry Shortcake

Fresh fruit garnishes and a little powdered sugar is all you need to top off this summertime favorite.  

Tiramisu

Espresso, rum, cocoa, and creamy mascarpone filling make this dessert out of this world.

The Art of Cake Decorating

Chocolate Cream Cake

White icing, piped details topped with maraschino cherries and chocolate shavings make this Black Forest cake outstanding, but the real showstopper is the chocolate latticework wrapped around the sides. 

I have a confession to make – researching and writing this post made me hungry for dessert. Before you continue reading, I suggest having a treat ready to eat, or grab the car keys and run to the bakery. Okay, now let us explore cake decorating.

Cake decorating bags can be filled with a variety of icings and each metal tip creates different designs, from flowers, to ribbons, stars and many more.  Piping bags can also be used for fillings in pastries and donuts.

Piped buttercream frosting is a colorful and flavorful choice for cake decorating.

Confectioner’s Sugar drizzled over this cake is quick and easy.  The clustered cherries hint at the fruit filling hidden with this single layer cake.

Marzipan is made from almond paste and is a favorite candy treat, which adds a bit of whimsy to cakes as well as cupcakes.

If you always wanted to try sculpture, here is your chance to create a beautiful art piece and it’s edible too!  While smaller decorations can be made with fondant or gum paste, modeling chocolate is much stronger, enabling the creation of larger figures, such as the Disney characters shown above.

An easy way to add color to any cake is by using rainbow colored layers.

This cheesecake has a translucent topping and center filling made from orange juice concentrate and sugar.  An unexpected block pattern is only revealed when sliced.

Both of these cakes offer incredible color and texture.  On the left, the ombré effect of the piped roses leads the eye toward the sparkling glass bride and groom topper.  Piping, stamping, gum paste, and candy making techniques have been beautifully combined in this unique garden gazebo.

Bold colors are certainly eye-catching.  The first, known as a topsy-turvy cake, is wrapped in fondant and decorated with geometric and floral cut fondant.  The floral cake has been hand-painted with edible inks, creating the look of stained glass.

This floral cake is a real labor of love.  Each gum paste flower, leaf and butterfly is made by hand and set in place to create the cascading garden.  As the design nears completion, iridescent edible inks are brushed on to provide depth and realistic details in this incredible wedding cake.

Pumpkin – Baking with Seasonal Flavor

After Halloween has come and gone, you might be wondering what to do with all those leftover pumpkins. Whether you prefer fresh or canned pumpkin, there are plenty of delicious ways to enjoy this seasonal favorite. There’s nothing like the mouth-watering aromas of homemade cookies and pastries, straight from the oven. It may be a cold fall and winter, but you can warm hearts and bellies with a lot of love and a few easy recipes.

To save you time and ensure success, the baking section of your local craft store has a large selection of pans, including bundt cake, cupcakes, muffins, jelly roll, etc. One of the more unusual pans is for baking donuts. Since no deep fryer is required, anyone can bake donuts at home, and the same pan can be used to make bagels too.

A fluted pan is the secret to the bundt cake. This photo shows the standard version of a bundt cake with icing drizzled over the top. If you really want to impress your guests, prepare an unexpected surprise by adding filling. To do this, pour half the batter into the pan. Spread the filling around the pan, ensuring it does not touch the inner or outer edges of the pan. Pour the remaining batter on top and bake. When the cake is sliced, the unusual profile of the slice will be enhanced by a colorful creamy center.

Pumpkin bread needs to cool before slicing. By refrigerating the loaf, the bread becomes moist like a cake. Toasted pumpkin bread is delicious with melted peanut butter. Metal pans are fine, but for baking bread I prefer a ceramic loaf pan. I don’t know about you, but the sound of metal scraping makes my skin crawl. Ceramic cleans up easier too.

You might want to have some chocolate on hand before you continue reading. Grab some Hershey’s kisses, or break open a bag of chocolate chips – anything will do – just in case!

Some crave nuts, caramel, or coconut with chocolate, but others passionately insist peanut butter and chocolate make the ultimate combo. Do you have a gourmet sweet tooth? Chocolatiers, such as Lindt, and Godiva, are excellent choices, but can be expensive. Making these decadent truffles takes a little more effort, but it’s still an easy process. Instead of filling the mold all at once, it is done in layers. The first layer forms the outer chocolate shell. Coat the mold with chocolate. Next the filling is added. Popular favorites are hazelnuts, butter cream, peanut butter, caramels, chocolate liqueurs and cream fillings. A piping bag can be used to make filling easier. Refrigerate the mold to allow the filling and chocolate to solidify. The last step is adding another layer of chocolate to fill any remaining voids and seal the top of the mold. Refrigerate and carefully un-mold. Your candy making skills will be the envy of all your friends and family.

Have you ever eaten a 100Grand candy bar? It’s a delicious combination of crispy chocolate with a gooey caramel center. Making your own is simple: Melt milk chocolate wafers and stir in Rice Krispies. Spread half the mixture in an 8×8 pan. Pour caramel sauce over the top, and then cover with the remaining chocolate mixture. Refrigerate to harden the chocolate and cut into bars. Don’t be surprised if the pan magically empties.
